No-Bake Nutty Honey Bars

Featuring: Manuka Honey (use your favorite variety—for example, UMF™ 15+ for its balanced flavor)

Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup mixed nuts (chopped almonds, walnuts, cashews)
  • 1/3 cup dried fruit (cranberries, apricots, raisins)
  • 1/3 cup almond butter or peanut butter
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • 3 tablespoons Manuka Honey UMF™ 15+ (plus extra for drizzling)

Instructions

  1. Combine Dry Ingredients: In a large bowl, mix together the oats, chopped nuts, dried fruit, and a pinch of salt.
  2. Mix Wet Ingredients: In a separate bowl, stir together the almond butter, melted coconut oil, vanilla extract, and Manuka Honey.
  3. Form the Mixture: Pour the wet ingredients over the dry ingredients and stir until evenly combined.
  4. Press & Chill: Transfer the mixture into a lined 8×8-inch baking pan. Press it down firmly with a spatula. Drizzle a little extra Manuka Honey on top, if desired. Refrigerate for at least 2 hours until firm.
  5. Cut & Enjoy: Once set, cut into bars. These make a perfect on-the-go snack or a healthy treat anytime.
